If you follow the blog you might remember about this time last year we “took care” of our aggressive rooster, Elvis. If you want all the details, here they are. It was time to cook him up. I used this recipe. I marinated elvis in wine with the veggies and herbs.
I should have used a roomier container to let all sides of the meat marinate. I browned him up, and cooked him down for a couple hours.
This was finished with bacon and mushrooms. I roasted potatoes with lemon and rosemary.
It wasn’t a bad dinner, it just makes you realize there is a reason we eat chicken when its very young. I have tried stewing hens and now Elvis is just further proof of that.
